In Kanazawa, fresh fish is more readily available than in Tokyo. Fresh sashimi is sourced from the same fishmongers (Omimachi Market) as Michelin-starred sushi restaurants.

Jibe-ni is a typical Kanazawa local dish.
It is not eaten in other regions.
